Homegrown carrot in salad

I actually found a carrot that had overwintered in the Hoop De Don't, so it found an honored place in tonight's salad.  We also had leftover Schinkenknudeln and green beans in Paulandaise sauce (I'll do recipes sometime), but I think the carrot had the sole starring role from the garden today.

Is it just my imagination, or do overwintered carrots seem to taste a bit sweeter? It always seemed that way when I discovered one, as if the cold concentrated the flavor. Or perhaps it was just my excitement at finding them.

I am still pulling carrots from the garden on regular basis, which is very exciting for me. Hubby looks at me strange when I very proudly say "I just picked these today"!

Okay, so I'm not totally insane for doing the skippy dance when I found it....
